Ingredients
For the Halibut
2 halibut fillets
2 tbsp extra virgin olive oil
1 tbsp butter
Sea salt, to taste
Freshly cracked black pepper
2–3 lemon slices
For the Lemon Butter Caper Sauce
3 tbsp butter
2 garlic cloves, minced
¼ cup dry white wine
2 tbsp fresh lemon juice
3 tbsp fresh parsley, finely chopped
2 tbsp capers
1 tbsp butter (to finish)
For Serving
Garlic potatoes
Sautéed spinach
Instructions
Step 1: Create that golden crust
Pat the halibut fillets dry and season generously with sea salt.
Heat the olive oil and 1 tablespoon butter in a large skillet over medium heat until shimmering.
Place the halibut into the pan and let it cook undisturbed for about 2½ minutes, allowing that beautiful golden crust to form.
Season with freshly cracked black pepper, then carefully flip.
Add the lemon slices to the pan and cook for another 2½ minutes, flipping the lemon slices halfway through so they lightly caramelize.
Transfer the halibut to a plate and set aside. Keep the lemon slices for garnish.
Step 2: Build the dreamy lemon butter sauce
Without cleaning the skillet (that flavor is liquid gold ✨), lower the heat slightly.
Add 3 tablespoons of butter and the minced garlic. Sauté for 20–30 seconds, just until fragrant.
Pour in the white wine to deglaze the pan, gently scraping up all the golden bits from the bottom.
Stir in:
lemon juice
parsley
capers
final tablespoon of butter
Let everything melt together into a silky, flavorful sauce.
Step 3: Bring it all together
Return the halibut to the skillet and spoon that gorgeous lemon butter sauce over the fish for 1–2 minutes.
Plate immediately and garnish with the caramelized lemon slices and extra parsley.
Serve alongside crispy garlic potatoes and sautéed spinach.

Make It Your Own
Easy swaps if needed:
Swap halibut for cod, salmon, or mahi mahi
Replace white wine with chicken broth + lemon
Serve with mashed cauliflower or roasted veggies for a lighter option
